Ingredients:
1 cup mashed sweet potato (about 1 medium sweet potato, cooked and mashed)
½ cup unsweetened applesauce
¼ cup maple syrup or honey
1 teaspoon vanilla extract
2 large eggs
½ cup whole wheat flour (or gluten-free flour blend)
½ cup cocoa powder
1 teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
Optional: ½ cup dark chocolate chips or chopped nuts
Directions:
Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
In a large bowl, mix the mashed sweet potato, applesauce, maple syrup, vanilla extract, and eggs until smooth.
In a separate bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid over-mixing.
If desired, fold in dark chocolate chips or nuts for extra texture.
Pour the batter into the prepared baking pan, spreading it evenly.
Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
