Ingredients
For the Dough:
- 1/2 cup warm milk
- 1/2 cup vegetable oil
- 1/2 cup sparkling water at room temperature
- 1 teaspoon dry yeast
- 1 tablespoon of sugar
- 1/2 tablespoon salt
- 3 cups of wheat flour (approximately 450 g)

For the Filling:
- 3 medium potatoes
- 100 g grated cheese
- 1 handful of chopped green onion
- 1 tablespoon butter
- Salt and pepper to taste
Preparation Method
Preparing the Dough:

- In a large bowl, combine warm milk, oil and sparkling water.
- Add the yeast, sugar and salt, mixing well until you obtain a homogeneous mixture.
- Add the flour little by little, mixing first with a spoon and then kneading with your hands.
- Knead the dough for about 3 minutes, until it is soft and no longer sticks to your hands.
- Cover with a cloth and let rest for 30 minutes.
Preparing the Filling:
- Cook the potatoes until soft, then drain and mash them into a purée.
- Add the butter, grated cheese, green onion, salt and pepper, mixing well. Let cool before filling.
Assembling the Empanadas or Pies:
- Divide the dough into 12 equal parts and shape into balls.
- Using a rolling pin, roll out each ball into discs approximately 20 cm in diameter.
- Place a portion of the filling in the center of each disc and close, folding the edges well to prevent them from opening when baking.
- Arrange the empanadas or pies on a greased baking sheet.
- Brush with milk or egg yolk for a golden finish.
- Make small cuts in the top to allow steam to escape.
- Bake in a preheated oven at 180 °C for about 25 minutes or until golden brown.

Tips for a Perfect Result
- Variety of Fillings: Swap the filling for mushrooms, ground beef or spinach with ricotta to innovate the flavors.
- Alternative without Sparkling Water: If you don’t have sparkling water, you can use regular water, but the texture will be slightly different.
