These Almond Joy Truffles are a decadent combination of smooth chocolate, creamy coconut, and crunchy almonds, all rolled into bite-sized treats. Inspired by the classic candy bar, they’re the perfect indulgent dessert for any occasion!
Recipe
Ingredients:
1 ½ cups sweetened shredded coconut
½ cup creamy almond butter
2 tablespoons maple syrup or honey
1 teaspoon vanilla extract
¼ teaspoon salt
24 whole almonds (about 1 ½ cups)
8 oz dark chocolate, chopped (or chocolate chips)
1 tablespoon coconut oil (optional, for smooth melting)
Directions:
Make the Coconut Mixture: In a medium bowl, mix the shredded coconut, almond butter, maple syrup, vanilla extract, and salt until well combined. The mixture should be slightly sticky but firm enough to roll into balls.
Form the Truffles: Scoop about 1 tablespoon of the coconut mixture and roll it into a ball. Press a whole almond into the center of each coconut ball, shaping the mixture around it to enclose the almond. Repeat with the remaining mixture and almonds.
Chill the Truffles: Place the coconut-almond balls on a baking sheet lined with parchment paper and refrigerate for 30 minutes, or until firm.
Coat with Chocolate: Once the truffles are chilled, melt the dark chocolate in a heatproof bowl over a double boiler or microwave, stirring every 30 seconds until smooth. If using, stir in coconut oil to make the chocolate coating extra silky.
Dip the Truffles: Using a fork or a dipping tool, dip each coconut-almond ball into the melted chocolate, ensuring it is fully coated. Gently tap off any excess chocolate and place the truffle back on the parchment paper.
Chill and Set: Return the truffles to the refrigerator for 10-15 minutes, or until the chocolate has hardened.
Serve: Enjoy these indulgent Almond Joy Truffles as a delicious dessert or gift them to friends and family!
