These crispy, cheesy broccoli balls are perfect as a snack, appetizer, or even a veggie-packed side dish. Easy to make and loaded with flavor!

Ingredients:
2 cups broccoli florets, steamed and finely chopped
1 cup shredded cheddar cheese
½ cup breadcrumbs (use gluten-free if preferred)
¼ cup grated Parmesan cheese
2 large eggs, beaten
2 cloves garlic, minced
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon paprika
Optional: pinch of red pepper flakes for a bit of heat
Directions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
In a large bowl, combine the chopped broccoli, cheddar cheese, breadcrumbs, Parmesan, eggs, garlic, salt, pepper, and paprika. Mix well until all ingredients are evenly incorporated.
Using your hands, form the mixture into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
Bake for 18-20 minutes, or until the balls are golden brown and the cheese is melted.
Serve warm with a dipping sauce, like ranch or marinara, if desired.
