Christmas Ooey Gooey Butter Cookies

Ingredients

1 (8 oz) package cream cheese, softened
1/2 cup unsalted butter, softened
1 large egg
1 tsp vanilla extract
1 box (15.25 oz) white or yellow cake mix
1 cup powdered sugar (for rolling)
Red and green holiday sprinkles or colored sugar

Instructions

Prepare the Dough:

In a large mixing bowl, beat the cream cheese and butter until smooth and creamy.
Add the egg and vanilla extract, and mix until well combined.
Add the cake mix to the cream cheese mixture and stir until fully incorporated. The dough will be thick and sticky.
Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or until firm. This makes it easier to roll the dough.

Form the Cookies:

Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
Scoop out tablespoons of chilled dough and roll them into balls.
Roll each ball in powdered sugar to coat, then gently press some red and green sprinkles into the tops.

Bake the Cookies:

Place the cookie dough balls on the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are set but the centers are still soft. The cookies should be slightly underbaked to stay gooey.

Cool and Serve:

Allow the cookies to cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
