Homemade Pickled Sausages

Ingredients:
– 1 pound smoked cocktail sausages
– 1/2 cup apple cider vinegar
– 1/4 cup water
– 1/4 cup granulated sugar
– 1 tbsp coarse sea salt
– 1 tsp pickling spice
– 1/2 onion, sliced
– 4 garlic cloves, smashed

Directions:
1. In a medium saucepan, mix together the apple cider vinegar, water, granulated sugar, coarse sea salt, and pickling spice over medium heat. Stir until the sugar and salt dissolve and bring to a boil.
2. Add the smoked cocktail sausages, sliced onion, and smashed garlic to the boiling mixture. Let it come back to a boil, then reduce the heat to low and simmer for 15 minutes.
3. After 15 minutes, take the saucepan off the heat and let the sausages cool slightly in the brine.
4. Once cooled, transfer the sausages and vegetables into a clean jar. Pour the brine over them, ensuring they are completely submerged.
5. Seal the jar with a lid and refrigerate for at least 2 days to allow the flavors to develop.
