🍲 Black Pepper Chicken with Mushrooms

Ingredients

For the Chicken:

  • 500 g (1 lb) boneless chicken breast or thighs, cut into bite-sized strips
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • ½ teaspoon black pepper
  • 1 teaspoon oil

For the Sauce:

  • 3 tablespoons soy sauce (light)
  • 1 tablespoon oyster sauce
  • 1 tablespoon dark soy sauce (for color, optional)
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 tablespoon cornstarch mixed with 3 tablespoons water (slurry)
  • 2 teaspoons freshly ground black pepper (adjust to spice level)
  • 1 teaspoon sugar
  • ½ cup chicken broth (or water)

Vegetables:

  • 2 tablespoons cooking oil
  • 1 medium onion, sliced
  • 1 bell pepper (red or green), sliced into strips
  • 200 g (about 2 cups) mushrooms, sliced (button or cremini work best)
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 green onions, cut into 1-inch pieces

Instructions

Step 1: Marinate the Chicken

  1. In a bowl, combine chicken strips, soy sauce, cornstarch, black pepper, and oil.
  2. Mix well and let marinate for 15–20 minutes while preparing vegetables and sauce.

Step 2: Make the Sauce

  1. In a small bowl, whisk together soy sauce, oyster sauce, dark soy sauce, vinegar, chicken broth, sugar, cornstarch slurry, and freshly ground black pepper.
  2. Set aside. (The slurry will thicken the sauce when cooked.)

Step 3: Stir-Fry the Chicken

  1. Heat 1 tablespoon oil in a large skillet or wok over medium-high heat.
  2. Add marinated chicken and stir-fry until golden brown and just cooked through (4–5 minutes).
  3. Remove chicken from pan and set aside.

Step 4: Cook the Vegetables

  1. In the same pan, add another 1 tablespoon oil.
  2. Add garlic and ginger, sauté for 30 seconds until fragrant.
  3. Add onion and mushrooms, stir-fry for 3–4 minutes until mushrooms release moisture and turn golden.
  4. Add bell pepper and stir for another 2 minutes.

Step 5: Combine & Add Sauce

  1. Return the chicken to the pan.
  2. Pour in the prepared black pepper sauce.
  3. Stir continuously until the sauce thickens and coats the chicken and vegetables (2–3 minutes).
  4. Add green onions, toss, and turn off the heat.

Serving Suggestions

  • Serve hot over steamed rice, fried rice, or noodles.
  • Garnish with extra freshly cracked black pepper for a stronger kick.
  • Pair with a light side dish like cucumber salad or stir-fried greens.

Result: Tender chicken, earthy mushrooms, crunchy peppers, and a bold black pepper sauce — a restaurant-style stir-fry ready in 30 minutes.
