  • 2 cups (300 g) fresh strawberries, hulled and sliced
  • ¼ cup (50 g) sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons water

Instructions

Step 1: Prepare the Gelatin

  1. In a small bowl, sprinkle gelatin over 3 tablespoons cold water.
  2. Let it sit for 5–7 minutes to bloom (it will look like a gel).

Step 2: Make the Cream Mixture

  1. In a saucepan, combine heavy cream, milk, and sugar.
  2. Heat gently over medium heat, stirring until the sugar dissolves (do not let it boil).
  3. Remove from heat and stir in the vanilla extract.

Step 3: Add Gelatin

  1. Stir the bloomed gelatin into the hot cream mixture until fully dissolved.
  2. Strain the mixture through a fine sieve to remove any lumps for an extra-smooth texture.

Step 4: Chill the Panna Cotta

  1. Pour the mixture into serving glasses, ramekins, or molds.
  2. Refrigerate for at least 4–6 hours, or overnight, until set.

Step 5: Make the Strawberry Sauce

  1. In a saucepan, combine strawberries, sugar, lemon juice, and water.
  2. Cook over medium heat for about 8–10 minutes, until strawberries soften and sauce thickens.
  3. Blend with a hand blender for a smooth sauce (or leave chunky if you like).
  4. Let cool completely.

Step 6: Assemble & Serve

  1. Once the panna cotta is set, spoon or drizzle strawberry sauce on top.
  2. Garnish with fresh mint leaves or extra sliced strawberries.
