Weeknight Chicken Stir-Fry 🍗🥦

Ingredients:
• 1 lb. boneless, skinless chicken breast, cut into 1-inch pieces
• 2 garlic cloves, minced
• 2 tsp ginger, minced
• 1 cup chicken broth
• 3 tbsp soy sauce
• 2 tsp sugar
• 2 cups mixed veggies (broccoli, sugar snap peas, bell peppers)
• 2 tsp cornstarch
• Cooked rice for serving
• Toasted sesame seeds (optional)

Instructions:
1️⃣ Spray a 12-inch skillet with cooking spray; heat over medium-high.
2️⃣ Add chicken, garlic, and ginger; sauté for 5-6 minutes until browned.
3️⃣ Stir in ¾ cup broth, soy sauce, and sugar. Cover and cook for 5 minutes, stirring twice.
4️⃣ Add veggies; cover and cook 5 minutes until chicken is cooked through and veggies are tender.
5️⃣ Mix cornstarch with remaining broth, stir into skillet, and cook until sauce thickens.
